At Audrey, the fryer is where the day begins: chicken drumsticks tumble out golden and shattering, shrimp goes in under a light tempura coat, and the batter stays crisp long enough to survive the drive home. Then comes the sauce — bright citrus peel for Orange Chicken, a darker sweet-heat glaze for General Tso's — brushed on at the last second so the crust never softens.
